Cheesy Chicken and Rice

This delicious cheesy chicken and rice is quick, simple, and can be made in advance for a quick weekday dinner.

  • 2 cups Cooked rice
  • 2 cups Cooked, chopped chicken
  • 1/3 cup Melted butter
  • 1 cup Shredded cheddar cheese
  • 1 cup Grated parmesan cheese
  • 1 cup Shredded mozzarella cheese
  • 3/4 cup Milk
  • 3 large eggs
  • 2 10 oz pkg Frozen Spinach
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 cloves Minced Garlic


  • Thaw and drain frozen spinach.
  • Cook rice according to package. Finished volume should equal 2 cups.
  • Melt butter and allow it to cool.
  • Gently beat eggs.
  • Combine all ingredients, except mozzarella cheese.
  • Pour mixture into a greased 13 x 9 baking pan.
  • Top with mozzarella cheese.
  • Cover with foil and bake at 350 degrees for 30 minutes.
  • Remove foil and bake an additional 10-15 minutes.
  • Enjoy!


*This dish also makes a great side dish! Omit the chicken and cook according to directions.
**This dish can be made in advance and frozen for later. Prepare according to directions up until baking. Cover well and freeze. When ready to cook, thaw overnight and bake 45 minutes covered and 10-15 minutes uncovered.
